Beautiful Colours and full of vitamines!

 

This is a very nice summer dessert, choose any kind of fruit you like and enjoy :)

Method

  1. Start with making a custard. Whisk the sugar, egg yolk, both kinds of flours and 150ml of milk together in a bowl of a standing mixer, let it mix for about 1 minute, then set aside. 

  2. Pour the rest of the milk in a pan. Split the vanilla pod open, scrape out the seeds with the tip of a knife and add these to the milk together with the vanilla pod. Gently bring to a boil, then remove from the heat.

  3. Pour about a quarter of the hot milk into the egg mixture, whisking all the time, then slowly add the rest of the milk.
    Put your pan back on a medium heat and cook while stirring continuously till the crème becomes thick. Remember to remove the vanilla pod.

  4. Remove the pan from the heat and pour it into a bowl. Cover the bowl with plastic wrap/film and press gently on to the surface, to avoid skin forming. Let it cool before using.

  5. Peheat the oven to 180ºC.    

  6. Place the pastry on the baking paper. Fold the edges slightly and brush them with the beaten egg yolk. Spread the custard evenly over the puff pastry.

  7. Bake it about 25-30 minutes or until edges are golden.

  8.  Wash and cut the fruits of your choice.

  9. Prepare the glaze, stir the potato starch with sugar and ad a little bit of apple juice. Heat up the rest of the apple juice, till bubbles appear. Take the pan off the fire and stiring continuously add the apple juice mixed with the flour. Put the pan back on to the fire and let it cook for a short time, stirring continuously. Set a side. Let it cool.

  10. After your pastry is baked arange the fruits on top of the custard and brush the glaze over the fruits.

250g ready made puff pastry,    egg yolk, beaten slightly

  • 2 tablespoons of caster sugar
  • 1 eggs yolks
  • 1 tablespoon potato flour
  • 1 teaspoon all purpose flour
  • 250ml full-fat milk
  • ½ of vanilla pod

fruits topping

  • 250g fresh summer fruits like raspberries, strawberries, blueberries, gooseberries, peaches, red-currents 

glaze

  • ½ tablespoons of potato flour
  • 1 tablespoon of sugar
  • 125ml apple juice
