Cupcake: A small cake designed to serve one person. Have one...or two.

For all chocolate lovers.  
Every time I ask my boys what they would like me to bake today, the answer is always the same, chocolate cupcakes.
This is an simple recipe for lovely rich and moist cupcakes.
Everyone loves them and these are super easy to make, so give it a try and fall in love.

Makes 8 servings.

Method

Preheat oven to 160°c  ( without the fan).
Line a 12-cup muffin pan with paper linings or muffin papers.

In a medium size pan boil the water, then lower the heat and add butter, chocolate, sugar, stir the mixture till everything melts.
Take the pan off the fire and let it cool down for a while.

Next, add a whisked egg and vanilla extract to the cooled chocolate.  Stir it until all the ingredients  are combine,  looking  glossy. Divide the mixture between 8 muffin cases. Bake it for 18 minutes, no longer then that you want your cupcakes be moist. Remove the cupcakes from the oven take it out from the muffin pan and let it cool on a wire rack.

 

Most of the times we eat them just plain, for special occasion I will put some ganache on top or jam.

  • 100g butter
  • 100g, 70% cocoa, chocolate, broken into small pieces
  • 100g brown sugar
  • 50ml water
  • 1 egg
  • 125g plain flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
