Tiramisu:
From the Italian 'pick me up'

 

We love Italy itself and we LOVE traditional Italian desserts. This particular one is one of my family's favorites. It is really easy to make and it should take about 15 minutes to make it plus a few hours in the fridge. It is probably best to make this dessert one day in advance so all the flavours have time to settle down.
Perfect for a dinner with friends.
Makes 8 servings.

Who doesn't need a "pick me up" every now and then?

Method

Whisk the eggs yolks together with the icing sugar for about 8 minutes until the mixture becomes creamy and fluffy. Fold in the mascarpone using a spatula until smooth. Add 2 tablespoons of Amaretto and stir it again. Set a side.

Mix espresso coffee with 4 tablespoons of Amaretto and water in a shallow dish.  
Prepare your serving dishe.

To assemble the tiramisu

Dip the lady fingers one by one, for a very short moment, just to allow the coffee mixture soak half way. Layer the biscuit on the bottom of your dish. You can, if you need to, break the biscuit in half to make if fit on the bottom. Don’t soak it for too long because it would make your Tiramisu very soggy.  Spoon over one third of the mascarpone filling. Then repeat the layer 2 more. 

Cover and chill for at least few hours preferable overnight. Grate some chocolate on top before serving.

  • 500 grams mascarpone
  • 3 egg yolks
  •  5 tbsp. icing sugar
  • 2 tbsp Amaretto liqueur
  • 600grams lady finger
  • 2 shots espresso coffee
  • 200 ml water in room temperature
  • 4 tbsp. Amaretto
  • 50 grams of good, 70% cocoa dark chocolate, thinly grated
