Yeast pancakes
Is it a donut or a pancake? It's better....both in one...

 

 I used to love those when I was a child. 
Nice soft inside and crunchy on the outside.
A must try if you never had it. 

Makes 8 pancakes

Method

In the bowl of a standing mixer (or simply a medium sized bowl using a wooden spoon to mix ) put warm milk ,  half tablespoon of caster sugar and 7 grams of active dry yeast. Using the paddle attachment blend the mixture till the yeast dissolves. Cover it with a tea towel and let it stand in a warm place till some bubbles form on top in about 10-15 minutes.

After your yeast is nice and bubbly change the attachment for a dough hook, add flour, 1 tablespoon of caster sugar, a pinch of salt and 1 teaspoon cinnamon (cover the mixer with tea towel to avoid a mess). Knead the dough for about 5 minutes and then add softened butter, small pieces at a time. 
Let the machine knead for another 5 minutes.
(You can also use a bread machine choosing a dough program to knead the dough, or just knead it by hand for about 10-15 min). After 5 minutes the dough should stop sticking to the sides of the bowl. If the dough is still wet add a little bit more flour and keep kneading for one or two minutes and check again. Repeat if the dough is too wet still.

Cover the dough with plastic wrap and let it rise in a warm place for an hour or until the dough doubled in size.

Peal and slice the apples.

Mix in the sliced apples. Place the dough on to a floured surface.
If the dough is too wet add a little bit of flour to stop sticking, form 10 balls by hand, squashing them gently on both sides. 
Cover with a tea towel and let it rest for 20 min.

Line 2 plates with paper towels.

Heat some rapeseed oil in a frying pan (about 0,5 cm deep),  gently place each of pancakes in the oil and lower the heat to medium and fry it on both sides till golden..

Once golden brown, transfer the pancakes on the plates with paper towels plates to let them cool off.

Sprinkle with icing sugar and serve.

Ingredients

dough:

  • ¾ cup full cream milk (42°C /  105°F) (180ml)
  • 1 ½ cup of plain flour ( 250g)
  • 1 ½ tablespoon caster sugar
  • 7 grams of dry active yeast
  • pinch of salt
  • 30 grams of butter
  • icing sugar for serving
  • rapeseed oil for frying

Version with apples

  • 2 apples 
  • 1 teaspoon cinnamon
