If you haven't tried Chia seeds yet you are missing out! give it a try. Eat it as a pudding, perfect for lunch box or healthy breakfast.
Really tasty and super easy to make.

Method

In a bigger jar stir the coconut milk, chia seeds and agave syrup ( if used).
Let it stand for 10 minutes, stirring every minute. The Chia seed will begin to swell. Close the jar and let it refrigerate overnight. 

For serving, put few spoons of chia seed in a bowl, arrange Greek yogurt, fruits and nuts on top. 

 

 

Ingredients

  • 1 cup (250ml) coconut milk          (from a carton, not a can). I recommend to use one without added sugar. Or any other non dairy milk of your choice
  • 5 tablespoons chia seeds 
  • 3 tablespoons of agave syrup. In case the coconut milk already had added agave syrup or sugar then there is no need for extra syrup.

for serving

  • handful of fresh fruits as you like
  • 2 spoons of Greek yogurt
  • few cut nuts like hazelnut, almond, walnuts
