My mother still makes the best rice pudding with apples! Once it's ready it smells and tastes too good :)

Method

Preheat the oven to 180°C.

Place the rice, milk, vanilla pod and vanilla seeds in a pan. Stir it around and cover with a lid. 
Bring it to a boil on a medium heat. Do not open the lid from now till the end of cooking the rice. Let it cook for 15-20 min, until all milk disappears. 

In the meantime prepare the apples by cutting them into smaller pieces. Place them in a big pan, add sugar and cinnamon. Fry them untill nice and soft in around 15-20 minutes.

Butter you ovenproof dish, spread half of the rice on the bottom of the dish, then the apples evenly on top of it and a rice layer on top. 
Cut the butter into thin slices and arrange these on the top of the rice, cover it with a lid.

Bake it for 40 minutes

Serve with some greek yogurt. Enjoy!

  • 4 cups of full fat milk
  • 2 cups of rice
  • 1 vanilla pod, cut in a half, seeds scraped
  • 1 kg of apples
  • 6 tablespoons of sugar (or more, depending on how sweet apples you will use)
  • 1 teaspoon of cinnamon
  • 30g of unsalted butter plus 1 tablespoon for greasing
  • greek yogurt for serving
