Cake, with CHO-CO-LATE

 

Everyone loves this cake, it's my mum's recipe in fact. If you don't have much time but you want to prepare something nice, easy and very tasty then this is the cake to go for :)
In a cool dark place it should stay fresh for a few days.

Method

Use a medium sized baking tray and line it with baking paper. Preheat the oven to 180°C (350°F).

Put all the ingredients, except the jam, in a bowl. Mix everything together with a spatula, right at the very end you can add the jam with just a few stirs, it's nice to have some jam bits in the cake.

Bake for about 40-50 minutes.
Check to see if the cake is done by inserting a toothpick in the middle, if the toothpick is dry it means the cake is done.
Once done, let it cool and serve with some sieved icing sugar on top or brush over with Ganache to make it even reacher sprinkle with shredded coconut or chocolate sprinkle. 

 

 

Ingredients
 

  • 3 cups self -rising flour
  • 1 ½ cups castor sugar
  • 1 ½ tbsp. cocoa powder
  • 1 ½tsp bicarbonate of soda
  • ⅔ cup canola oil
    (you can also use sunflower or coconut oil)
  • 1 ½ cups 3% fat Greek yogurt
    (you can also use  18% sour cream )
  • ½ cup full fat milk
  • 1 teaspoon of orange essential oil
    (you can use orange zest instead)
  • 2 tbsp raspberry/ plum or cherry jam ( optional )
